We all know how stressful it can be trying to jostle for space in the oven when someone’s cooking dinner and someone else is waiting to pop theirs in – and we all also know how much we deserve a sweet treat from time to time! For that very reason, we’ve put together a few easy no-bake dessert recipes that require zero oven time…
Oreo Truffles
Making truffles might sound difficult, but believe us when we say it’s actually pretty easy to do from scratch. Here’s what you’ll need:
1 pack of Oreos
225 grams of cream cheese
1 tsp of vanilla extract
400g white chocolate chips
2 tbsp coconut oil
100g plain chocolate chips
Crush the Oreos up (if you have a food processor this is easier!) then add them to a bowl with the cream cheese and vanilla – saving around two tablespoons of your crushed up biscuits for later. Form this mixture into balls and pop them on a tray and into the freezer for around half an hour. When that 30 minutes is almost up, melt the white chocolate chips with the coconut oil then dip the balls into that. Drizzle with melted plain chocolate chips and voila – easy peasy no-bake truffles!
Chocolate Covered Strawberries
It really doesn’t get much easier than this – you literally just need some strawberries and some milk chocolate and you’re done! Wash your strawberries, melt your chocolate, dip them in and let the chocolate set – that’s it. You can of course choose to decorate them with sprinkles while the chocolate is still melted, or by drizzling coloured icing over the hardened chocolate… but essentially, two ingredients and you’re good to go.
Vanilla Cheesecake
This one is slightly trickier, but SO worth it. Here’s what you’ll need…
250g digestive biscuits
100g melted butter
1 vanilla pod
600g cream cheese
100g icing sugar
280ml double cream
Crush your biscuits up, and mix them with your melted butter in a round baking tin lined with greaseproof paper. Pop that in the fridge to firm up! Remove the vanilla seeds from the pod, and add them into a bowl with the cream cheese and icing sugar. Mix it all together really well until it’s smooth, then add in your double cream and keep mixing until everything is combined. Get the biscuit base out and scoop on the mixture, then leave in the fridge to set. That’s it! You can add toppings of any kind, because pretty much everything goes with vanilla – so whatever you fancy adding, give it a try and enjoy.
Rocky Road
This is another *super* easy one, and one which you can really customise. Here are the basic ingredients:
200g digestive biscuits
135g butter
200 dark chocolate
2-3 tbsp golden syrup
100g mini or chopped marshmallows
Bash up your biscuits first of all – not into crumbs, but into pieces around the size of a 50p coin. Then melt your butter, chocolate and syrup together in a pan on the hob, stirring well. Leave it to cool a little bit and add in your biscuits and marshmallows alongside any other fillings you’ve chosen – popcorn, sweets, nuts, dried fruit… it’s really up to you! Pop in the fridge to set and you’re all done.
