Berries and Yoghurt
This one is a really tasty way to start the day: simply layer Greek yoghurt into a bowl with some berries (buy them frozen and thaw overnight to save money!) and you’re done. You can add a drizzle of honey or a sprinkle of granola too, if you fancy.
Avocado Toast
The “boomers” might say this is the reason young people will never get a mortgage, but it actually doesn’t work out that expensive – and it’s just so delicious. Make a slice of toast, mash some ripe avocado and spread on top, then top with whatever you fancy… or whatever you’ve got in the fridge! Chilli flakes, a poached egg, some sliced tomatoes – it’s entirely up to you.
Spring Vegetable Omelette
An omelette is a really filling (and healthy) way to start the day. Full of protein, they’re also really easy to make. Whisk a couple of eggs together with a splash of milk, and fry off some seasonal vegetables until tender – think spinach, asparagus, tomatoes, kale and spring onions. Then pour your egg mix over them, add in some cheese if you want, and cook until you have the perfect omelette. This will really kickstart your day, and makes for the perfect Spring breakfast for students.
Green Smoothie
If you’re not really one for eating first thing in the morning, then a smoothie is the ideal way to get a load of Spring nutrients into you. You can pick up a blender or smoothie machine fairly cheap, and you could even split the cost with your flatmates if there’s a few of you that would get some use out of it! What you put in your smoothie is up to you, but one great recipe includes spinach, kale, banana, pineapple and coconut water. It sounds like an odd mix, but trust us! You can add a scoop of protein powder too, if you need to get a bit of extra protein in.
Salmon and Cream Cheese Bagel
Cut a bagel in half and toast it, then spread with low fat cream cheese and add some smoked salmon on top. That’s basically it! You can get all sorts of different bagels, and you can also add extra toppings like cucumber, dill, red onion, olives or avocado. This is a really flavoursome Spring breakfast to get you ready for a day of hard work.
Chia Seed Pudding
This is one you have to make a start on the night before, but it’s worth it for a healthy and filling Spring breakfast. Mix some chia seeds with whatever milk you like (oat, dairy, coconut…) and a sweetener of some sort, like honey. Leave them in the fridge overnight so they thicken up nicely – and when you get up in the morning, your breakfast is almost ready to go. Simply add some chopped banana or strawberries on top, and even a dollop of Nutella to really sweeten things up, and you’re good to go.
