Summer is definitely salad season – it’s quick, easy, cold… and you can change it up to suit your tastes! They’re also really good for you, helping you get those veggies in while studying. Making your own lunch and taking it to campus with you is a really good way to save money, too, because you don’t need to pay out for packaged sandwiches and wraps. With that in mind, and now that the sun has come out to play, here are some fantastic summer salad recipes for you to enjoy…
Easy Greek Salad
Greek salad will definitely give you Mamma Mia vibes, and it’s so tasty. Chop up some cucumber, tomatoes, red onions and green bell pepper – toss with a drizzle of olive oil and a sprinkle of mixed herbs, or Greek herbs if you can get your hands on some. Add in some olives of your choice and some cubed feta cheese, and you’re done! You can throw some fresh mint in there if you want some extra zing, too.
Cheeseburger Salad
If you’re a meat lover, why not try a cheeseburger salad? It essentially encompasses everything you’d find in a nice big juicy burger – but without the bun! A base of lettuce, some thoroughly cooked and seasoned beef mince, gherkins, sliced tomatoes and of course some onions. Sprinkle some cheese on the top and drizzle over some burger sauce; you can make your own sauce but it’s readily available in most supermarkets as well.
Chicken Caesar Salad
This is a classic, and another one for the meat lovers amongst us. Chop up some Romaine lettuce for your base, then add in some croutons, chicken, bacon and mix it all up with some Caesar salad dressing. Again you can buy this in most supermarkets – making your own is tricky! Add some parmesan or grated hard cheese on the top and you’ve got yourself a finished salad ready to be boxed up and taken with you for a day of studying in the sunshine.
Super Green Pasta Salad
This is the perfect vegan option – and it just oozes healthy vibes with all that green goodness. You can make this by boiling some pasta of your choice, and in the meantime chopping and mixing a bunch of green veggies: cucumber, spinach, peas, green peppers, cubed avocado and so on. Whatever floats your boat, really! Once your pasta is cooked and cooled (tip: run it under cold water after draining) you can add the pasta in too with a squeeze of lemon juice and fresh herbs of your choice. Tasty and gorgeously green!
Broccoli & Bacon Salad
Our final summer salad recipe is a broccoli and bacon salad – and it’s a really easy one. Chop up and boil your broccoli, and once cool mix it with grated carrots, chopped red onions, almonds, and a dressing of your choice. Cook your bacon however you like and add that in too, then you’re good to go. This one is a real crowd pleaser.
