We’ve already shared a few super easy student recipe ideas you can make in your student kitchen, and we thought we’d share a few more now that Autumn is really settling in. These are nice, cosy, warming meals you can batch-cook and/or share with your flatmates. Enjoy!
Simple Beef Stew
If you have a slow cooker then you can do it in there, but an oven works just as well for a really hearty and delicious stew. You can see the basic recipe and instructions below, but feel free to add extra veggies and choose from mashed or boiled potatoes to serve with – and if you feel like treating yourself, get a nice tiger loaf and smother it butter ready to dunk in and soak up the gravy…

This is really a case of cooking the beef and then throwing everything else in and leaving it for a really long time. Told you it was simple!
Depending on how many people you’re cooking for, the quantity of each ingredient will vary. If you’re making this tasty stew for four of you then your flatmates are very lucky and you’ll need about 900g of beef, one onion, 4 carrots, 700ml of beef stock, 2 tablespoons of tomato puree and one of Worcester sauce. As mentioned you can of course add plenty of other veggies, and many supermarkets sell readymade ‘stew mixes’ making it even easier for you.
Pumpkin Soup
You just can’t go wrong with a soup, and if you make a big enough batch it’ll do you for a few meals. With Halloween around the corner, pumpkins are available in abundance and they taste absolutely delicious. Here’s what you’ll need…
1KG of pumpkin chunks
2 tablespoons of olive oil
2 finely chopped onions
700ml veg stock
150ml double cream
Heat the oil and fry off your onions for about 5 minutes, then add your pumpkin and cook for around 8-10 minutes. Stock goes in next with some salt and pepper, which you’ll want to bring to a boil and then simmer for another 10 minutes. Finally add your double cream, bring back to the boil and then add everything to the blender until it’s silky smooth.
Cheesy Chicken & Broccoli Casserole
We love this one – a tasty, cheesy, hearty dish perfect for this time of year. You’ll be adding this one to your roster of meals, and the leftovers are delicious too. Here’s the lowdown:
450g chicken breast
350ml water
1 onion
1 pressed clove of garlic
3 tablespoon all-purpose flour
86g parmesan cheese
340g broccoli
Breadcrumbs
Cook off your chicken in a pan for a couple of minutes just until it’s browned on one side, then transfer it to a plate and turn the heat down; throw the onions in there for a few minutes and then add the garlic, before sprinkling the flour over the onions and garlic. Slowly stir in the water then add your parmesan, and add this whole mixture to a baking dish with your chicken and broccoli. Bake it for 10 minutes, then cover in breadcrumbs and bake for another 15 minutes. Et voila!
